I love my airfryer. Thank you Mummy for the gift. I told my mum I was frying food more than I otherwise do. My excuse, because my partner likes tasty food. Subsequently I was eating more fried food. Thus her answer: An airfryer. She gave this to me for my birthday years ago, when these first hit the shelves, and I am still loving it!!

Airfryer bulk cooking methods

To prep for daily healthy eating, I pack my airfryer with veggies. Then I blast them for 45 minutes at 180 degrees celsius. Consequently, the result delicious veg. Easy to peel and ready to mash baked potatoes. In the mix usually are 4 medium sized potatoes (for him), and a gem-squash with a tiny butternut for me. Of recent I have been adding beetroot. Therefore this is what you need to have done. Approximately 2 medium beetroot bulbs. Airfried, cooled, and peeled.

Beetroot Chocolate Cake Bites

Healthy, Oil-free, Dairy free, Wheat free, Gluten free : Chocolate Cake, made with roasted blitzed beetroot.
Prep Time 1 hour
Cook Time 5 minutes
Servings: 2

Ingredients
  

  • 2 cups beetroot roasted, and pureed
  • 1 tsp baking powder
  • 1 egg large
  • 5 tbsp cocoa powder
  • 5 tbsp chia seeds
  • 1 salt just a pinch

Equipment

  • 1 Blender
  • Oven optional
  • Airfryer optional

Method
 

  1. Ensure your beetroot is blitzed smooth, no large pieces or outside rough skin.
  2. Mix all the ingredients in your blender until a red brown batter is formed.
  3. Sweeten to taste if needed.
    I will be rolling the tiny chocolate beetroot cupcakes in a form of powdered sugar / sweetener to keep the amount of sweetener used to an absolute minimum. I find if the bite is in powdery sweetness, there is the illusion of sweet throughout the bite. Up to you. If you are serving this to other people the first time you make it, maybe add 2 tbsp of your choice of sweetener to the batter.
  4. Drop 1 tablespoon of the batter into a silicone cupcake holder and arrange in the airfryer.
  5. Bake in the preheated airfryer, 5 minutes at 180 degrees celsius, or until the skewer comes out of the batter clean.

Notes

So I want to eat more beetroot. Its an extremely healthy vegetable with loads of anti-oxidants. I also, like a sweet every now and then. You know, when you’re wanting a nibble. Hence, Beetroot Chocolate Cake Bites. 
Optional flavours; 
The first time I made this I also added; 
– 1/2 tsp vanilla essence
– 1  tsp coffee granules
– pinch of salt
A yummy version.

PLUS: I cook the leaves. Saute with garlic, and a tomato. Simple. Equally important.

So this is something I will always have in my garden.

In conclusion, beetroot is a life saving and life changing vegetable. Finally, I can have my cake. And eat it. Obviously, it was going to be a healthy cake.
